RECIPE: Vegetable Quesadilla

With heavy studying hours from preparing for exams, most college and university students do not have much time to cook themselves healthy means and resort to fast food. Although it is easy to get, it can really hurt the wallet and is really unhealthy for you. Instead of going for Mexican food, we decided to make our own homemade quesadillas. While we made them due to study cravings, you could most definitely make them for a quick meal for family dinner, appetizers for a party, or just because you're hungry and want something quick to make. Most of the ingredients are ingredients people have in their kitchen on an everyday basis and they are super quick and easy to make and super delicious to eat! 

This recipe was created by me, Jenn, by just filling it with stuff I like in my quesadillas. Feel free to add whatever vegetables or even meat to your liking. I made these for Adam recently and he adores them. 

We hope you guys try them out and enjoy them as much as we did!

What you will need:

  • 3 cloves of garlic 
  • Half of a white onion 
  • 2 Bell Peppers 
  • 1 green onion
  • 3 cups of shredded cheese (your choice of cheese, we used marble cheese) 
  • 1 cup of canned beans (we used Heinz Pork & Tomato Sauce flavored Beans)
  • Flour Tortillas
  • Half a package of Taco Seasoning
  • Vegetable Oil 
  • Butter
  • Salt and Pepper (to taste)

Quesadilla Filling Recipe:

  • Begin with mincing your garlic, slicing your green onion and dicing your onion and bell peppers. Also, this would be the time to shred your cheese, if you bought blocked cheese.
  • In a skillet, coat with your vegetable oil. Add your garlic, white onion and green onion until they soften. Then add your green onions. Let it cook until the green onion soften, while mixing often to prevent your vegetables from burning.
  • When vegetables are cooked, mix the beans into your vegetable mixture in your skillet. Slowly begin to add your taco seasoning, little by little, continuously mixing. After all your taco mix is fully mixed in, add salt and pepper to your liking. Now you have completed your quesadilla filling.

Filling your Quesadilla:

  • After cleaning your skillet or starting with a new skillet, butter it. While some people use oil to prevent quesadillas from sticking to the pan, we think butter is a better alternative in that it creates bigger flavor. For one quesadilla, you will need two tortillas. Butter the outside of each of your tortillas and place one tortilla on the skillet, butter side down (like a grilled cheese). 
  • Add your quesadilla filling on your tortilla, leaving half an inch of space between the edge of the quesadilla mix and the tortilla, to prevent the mixture from falling off the tortilla. Add your cheese on top of the quesadilla mixture. Top with the second tortilla, butter side facing up. 
  • Continuously check inside your quesadilla to see if the cheese is melted. Also check the bottom tortilla, to ensure it does not get burnt. When the bottom tortilla is lightly brown and the cheese inside is partially (or fully) melted, flip your quesadilla to cook the other tortilla. 
  • When both tortillas are lightly brown and your cheese is melted, you are read to place your quesadilla on a plate, cut it up into four slices, and serve it (or eat it up yourself) with sour cream or salsa.
